Blog post six: Summer Corn, Tomato & Avocado Salad



Ingredients

  1. 1 pint cherry tomatoes, halved

  2. 1 ripe avocado, diced

  3. 2–4 ears of corn, cooked or grilled, kernels removed

  4. ¼ cup red onion, finely chopped

  5. Fresh cilantro, chopped (to taste)

Honey Lime Dressing

  1. Juice of 1 lime

  2. 3 Tbsp vegetable or olive oil

  3. 1 Tbsp honey

  4. 1 clove garlic, finely chopped

  5. Salt & pepper, to taste

Instructions

  1. In a large bowl, combine cherry tomatoes, avocado, corn, onion, and cilantro.

  2. In a small bowl, whisk together lime juice, oil, honey, garlic, salt, and pepper.

  3. Pour the dressing over the salad and gently toss to combine.

  4. Let sit for 15 minutes before serving to allow flavors to meld.
